This new coffee is a tremendously clean cup, a perfect example of a high rated El Salvador that follows the terroir of the country and area. Being a very stand-up cup, it will pull fans from light to dark roasts. Lighter roasts will accentuate the slightly fruity acidity and floral/tea-like flavors. Not a super high acidity coffee but it will be seen at those light roast points. Medium roasts will pull some balance with a little sweeter chocolaty edge and create a refreshing mix of tones, semi-similar to a delicious Costa Rican coffee but less nutty. Darker roasts get full-bodied with very low acidity, more of a dark chocolate semi-sweet cup with a just a hint of floral; the roasty/smoky notes will complement these cup attributes.
